On June 24th, the Pennsylvania Pork Producers Council, in partnership with the Pennsylvania Beef Council, hosted the second “Meat” Me in the Kitchen event at Cedar Crest College in Allentown, PA. The interactive event welcomed 12 registered dietitians representing five retail chains for a hands-on culinary experience focused on the role of pork and beef in a balanced diet.

Attendees learned about the nutritional benefits of incorporating pork and beef into meal planning for clients, as well as proper preparation techniques for both proteins. Chef Tessa Nguyen, RD, led the session and introduced her signature concept of building “3D Flavors”—Delicious, Diverse, and Daily. Through this framework, she emphasized the value of layering various flavor profiles such as salty, spicy, sweet, sour, and unique to create satisfying and well-rounded dishes.

During the event, participants prepared two globally inspired recipes: Southeast Asian Steak Salad and Pork & Veggie Fried Rice. These recipes showcased how pork and beef can be both nutrient-rich and approachable for everyday cooking.

“Meat” Me in the Kitchen is part of PA Pork’s ongoing efforts to educate and engage retail professionals in understanding the importance of pork as a lean, high-quality protein option for consumers.

In addition to the cooking experience, attendees engaged in a lively discussion about pork and beef’s role in a balanced diet. This was conducted through an “icebreaker” style activity where participants were asked a question and had to reflect upon their perceptions and experiences. Representatives from the PA Pork Producers Council and NEBPI were on hand to answer questions, share insights and facilitate the conversation.

PA Pork Producers Council would like to thank NEBPI and the New Jersey Academy of Nutrition and Dietetics for their collaboration in making this event a success. The 2025 Penn Ag Expo, held on Tuesday, March 18, brought together over 645 industry professionals, producers, and experts for a day of learning, networking, and innovation in the agricultural industry. The PA Pork Producers Council hosted  the Keystone Pork Expo sessions.

Dr. Melissa Billing from Boehringer Ingelheim kicked off the keynote sessions with valuable insights into animal health advancements. Dr. Meghann Pierdon from Penn Vet followed with a comprehensive update on GIS and swine health, highlighting the latest data and trends shaping the industry. Dr. Billings and Dr. Pierdon both discussed the new PRRS task force that has been put together by the National Pork Board.  Courtney Gray, Executive Director of the Pennsylvania Pork Producers Council, shared updates on the council’s ongoing initiatives, emphasizing efforts to support consumer education.

Rick Smith from the National Pork Board introduced an exciting new consumer campaign set to launch in early May. This initiative aims to connect younger generations with the diverse flavors profiles that pork has to offer. Over the past 18 months the National Pork Board has worked to categorize consumers into 7 segments to better understand their buying habits as they prepare for the launch. Stephanie Carlson from the National Pork Producers Council closed the morning session with an overview of the industry’s recent challenges and successes, as well as insights into working with the new administration in Washington, D.C. Carlson noted that recently, they had a large win when Secretary Rollins made the New Swine Inspection System (NSIS) permanent.

In the afternoon, Dr. Meghann Pierdon led a Pork Quality Assurance (PQA) training session, offering producers the opportunity to renew their certifications and stay up to date with best practices in pork production.

Throughout the day, attendees had the chance to explore the trade show, where they engaged with industry partners, networked with fellow producers, and discovered the latest advancements in pork production and management.

“The Keystone Pork Expo continues to serve as a vital event for Pennsylvania’s pork producers, providing them with the tools, education, and connections needed to succeed in today’s evolving industry,” said Courtney Gray. “We’re grateful for the support of our speakers, exhibitors, and attendees who make this event a success each year.”

PA Pork Sack’s Hunger

The Pennsylvania Pork Producers Council is proud to announce the resounding success of the Sack Hunger Campaign, an impactful collaboration with Penn State Football. Throughout the season, this innovative campaign made a tangible difference in the fight against hunger by donating 50 pounds of pork for every quarterback sack recorded by the Nittany Lions. With a total of 47 sacks this season, the campaign delivered an incredible 2,350 pounds of nutritious pork to local food banks and families in need.

“This campaign embodies the spirit of teamwork and community,” said Courtney Gray, Executive Director of PA Pork. “By partnering with Penn State Football, we were able to highlight the value of pork as a high-quality protein source while addressing food insecurity across Pennsylvania.”

Adding to this generosity, PA Pork board members committed additional funds from the historic “Give a Ham” program. Their contributions underscored the organization’s deep commitment to supporting families in need and expanding access to nutritious food.

The donated pork will be distributed through the Central Pennsylvania Food Bank, ensuring it reaches local families and individuals facing food insecurity. Pork, as a nutrient-rich protein, provides essential vitamins and minerals that are vital for maintaining a healthy diet. In total, both programs allowed for $13,000 in pork to be donated which comes out to just over 5,700 pounds of product being donated.

“It’s inspiring to see agriculture and sports come together for such a meaningful cause,” said Coleman Wagner, President of PA Pork. “We’re proud to represent Pennsylvania’s pork industry and to give back to the communities that support us.”

Weston Spect selected for 2025 Pork Leaders Institute

Weston Spect, a dedicated member of Pennsylvania’s swine industry, has recently been selected to join the 2025 class for the Pork Leadership Institute (PLI). Weston grew up on a small horse farm in Somerset, Pennsylvania, where he developed a passion for agriculture through 4-H, FFA, and raising fair pigs. He attended Pennsylvania State University, earning a degree in Animal Science with a minor in Equine Science.

After graduation, Weston began his career in feed sales before joining Country View Family Farms. Over the past two years, he has advanced through their Manager Trainee Program and is now the Farrowing Lead at a 5,500-head Prop 12-compliant farm.

Weston credits mentors at Country View Family Farms, especially Kolton Reasy, Andres Palma, Oscar Gomez, Christian Gutierrez, and Sarah Lazar, for fostering his growth, stating, “The knowledge and support from my colleagues have been invaluable. I’ve been fortunate to learn from a team that prioritizes continuous improvement and innovative problem-solving.”

Sponsored by the National Pork Board (NPB) and the National Pork Producers Council (NPPC), PLI is an elite program designed to cultivate knowledgeable and capable leaders for the U.S. pork industry. The goal of PLI is to provide participants with a holistic understanding of the industry, preparing them to engage in leadership roles that represent producers nationwide. To understand the impact of this program, many past participants have gone to serve on state pork boards or national boards with NPB and NPPC. Currently, 40-60% of the National Board of Directors consists of former PLI graduates.

PLI prepares participants to be well-informed advocates for the swine industry. The program provides in-depth education on complex topics such as trade, legislation, sustainability, and animal health while offering professional development opportunities. Participants leave with a strong network of peers and mentors, equipping them to navigate challenges and advance within the pork industry.

“I’m incredibly honored and excited to have been selected for PLI,” Spect shared. “The program offers a unique opportunity to meet industry professionals from across the country, exchange ideas, and gain new perspectives that I can bring back to my farm and community.”

As Weston embarks on this journey, he reflects on his growing passion for pork production. “I never imagined how rewarding this industry could be. It’s incredible to walk into a grocery store and see a product you’ve worked hard to produce on the shelf. I encourage young adults to step out of their comfort zones and explore a career in the pork industry—it’s a truly fulfilling experience.”
