
Ingredients
- 1 lb pork tenderloin sliced into 2-3” strips
- 1 Tbsp vegetable oil
- 1 Tbsp lime juice
- 1 Tbsp chili powder
- 1 ½ tsp cumin ground
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 ea onion sliced
- 2 ea bell pepper assorted colors, sliced
- 8 ea tortillas
- As needed cooking spray
- As needed mild cheddar cheese shredded (optional)
- As needed salsa optional
- As needed sour cream optional
Instructions
- In a bowl, toss together pork strips, first amount of vegetable oil, lime juice, chili powder, cumin, garlic, salt and pepper.
- Spray a skillet with cooking spray and heat over medium high. Add seasoned pork in batches to not over crowd the pan. Cook until pork is nicely seared and reaches an internal temperature of 145°F. Repeat with remaining pork and remove from pan.
- Again, spray pan with cooking spray. Add peppers and onions and cook, stirring occasionally, until just beginning to soften, about 2-3 minutes. Remove from pan and combine with cooked pork.
- Wrap tortillas in a damp paper towel and microwave for 30 seconds to heat.
- Serve hot fajita mix with tortillas and desired toppings, such as cheddar cheese, salsa, or sour cream.
