Lemongrass Lettuce Wraps

Ingredients

  • 1 lb 96% lean ground pork
  • 2 tbsp lemongrass minced (substitute lemongrass paste)
  • 2 tbsp soy sauce low sodium
  • 2 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 2 tsp ginger minced
  • 2 tsp garlic
  • 1 tsp sugar optional
  • ½ c carrots shredded
  • ½ c daikon radish matchstick cut
  • 2 Thai bird’s eye chilies optional
  • 12 bibb lettuce leaves
  • As needed cooking spray

Instructions

  • In a bowl, combine ground pork with lemongrass, soy sauce, fish sauce, rice vinegar, ginger, garlic and sugar (if using). Mix together until all ingredients are evenly distributed. Refrigerate for 15-30 minutes to allow flavors to marinate.
  • In a large skillet over medium heat, spray with cooking spray. Add seasoned ground pork and cook, breaking up, until cooked through and beginning to caramelize. Pork should reach an internal temperature of 160° F. Remove from heat.
  • Fold in carrots, radishes and chilies (if using). Serve warm with bibb lettuce leaves.
