Ingredients

  • 1 lb lean ground pork
  • 2 tbsp maple syrup
  • 1 tsp onion powder
  • ½ tsp salt
  • 1-2 sweet potato sliced into eight ½-inch rounds
  • 2 cups cabbage shredded
  • 1 apple cut into matchstick pieces
  • ½ cup red onion thinly sliced
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • 8 slices sharp cheddar cheese optional

Instructions

  • Preheat oven to 450°F. In a bowl, combine ground pork, maple syrup, onion powder, and salt. Mix until ingredients are well distributed. Set aside to allow flavors to meld.
  • Line a baking tray and spray with spray oil. Lay down sweet potato slices and spray lightly with oil. Roast for 15-20 minutes, until tender. Cool slightly.
  • In a bowl, combine cabbage, apple, red onion, mayonnaise, cider vinegar, and mustard. Mix well and season with salt and pepper to taste. Set aside.
  • Portion seasoned pork into 4 patties. In skillet over medium high heat sear patties for 2-2 ½ minutes per side, until it reaches an internal temperature of 160 degrees. Top with cheese if desired.
  • Plate burgers with one slice of roasted sweet potato, burger patty, ½ cup of apple slaw, and a second sweet potato slice.
