
Ingredients
- 1 ½ lbs pork loin cut into 1-inch cubes
- 8 cloves garlic minced
- ¼ cup extra virgin olive oil
- ¼ cup dry white wine
- 2 Tbsp lemon juice
- 2 tsp dried oregano
- 1 tsp sweet paprika
- 1½ tsp salt
- 1 tsp black pepper
- 2 ea red onion cut into 1-inch cubes
- 4 ea bamboo skewers soaked
- 2 ea pita bread halved
- 1 cup prepared tzatziki
- 4 cups shredded romaine lettuce optional
Instructions
- In a bowl combine garlic, olive oil, white wine, lemon juice, oregano, paprika, salt, and pepper. Add diced pork loin and onions, toss until well coated. Cover and refrigerate for a minimum of 30 minutes or up to overnight.
- Drain pork and onions from marinade. Discard remaining marinade. Skewer pork, alternating with 2-3 slices of red onion, equally dividing between 4 skewers.
- Preheat grill to 400-450°F. Grill skewers until pork reaches an internal temperature of 145°F, about 3-5 minutes per side.
- Allow pork to rest 5-10 minutes before serving. Serve skewers with pita, tzatziki, and shredded romaine if desired.
